If you've read through my older posts, you'll know that I love plantains…. a lot. So you bet I also love Dodo gizzards☺. When the gizzard is cooked, transfer to a bowl, leave to cool then cut into bite-size cubes. Cut the plantain into cubes and fry in vegetable oil until its brown then transfer it to a sieve.

Steps to make Veggie Gizzdodo:
  1. Start with the Gizzards, wash properly,. Season with garlic, ginger, black pepper, salt, onions and cook on medium heat till tender. This takes about 35mins. (Also depends largely on your gizzard toughness before cooking) Remove from the stick and set aside.
  2. Put a frying pan on medium heat, add enough oil and Fry till the Gizzard are all fried and looking a darker but still soft. Once it cools down, diced the Gizzard but make it slightly bigger than the Plantain.
  3. Wash Plantain, Peel and dice and Fry till golden. Removed Fry oil and allow to drain oil.
  4. Once all the veggies are washed and diced up nicely like in the picture. Put a clean non stick pan on medium heat, add about 1/4 cup of oil…
  5. Allow to get hot, add chopped onion, garlic, ginger and stir, add two spoons of fresh tomatoes puree, a little bit of salt and stir, add a little water and allow to simmer for a bit…
  6. Add in other chopped veggies, ie Cabbage, spring onions, running beans,peas, sweet corn and carrot and stir properly… Say 4-5mins
  7. Add the Gizzard, followed by the Plantain and black pepper, stock cube, salt and give it a very good stir…The tomatoes purée help everything stay together taste for salt and remove from heat…The Veggie Gizzdodo is ready!!!

When the gizzard is cooked, transfer to a bowl, leave to cool then cut into bite-size cubes. Cut the plantain into cubes and fry in vegetable oil until its brown then transfer it to a sieve. Fry the gizzards in the same oil until brown and transfer to a sieve too, you can n grill the gizzards if you want instead of frying it's an healthier option. Chop the tomatoes and peppers and blend coarsely, heat up some oil and add chopped onions in it fry it for a bit then add crayfish. Gizdodo is the combination of plantains and Gizzards (chicken Gizzards) and Plantains mixed in Pepper Sauce.
