Whizz prawns, garlic, ginger and spring onions in a food processor to a fairly smooth paste. Mix the flour, baking powder and cold water together until a smooth batter forms. Heat the vegetable oil in a wok or turn on a deep fat fryer. Add prawns and flour with a sherry splosh, and blitz again.
