- Make ready 1 small piece Ginger *finely chopped or grated
- Prepare 1 cupful Vegetables *e.g. Carrot, Boy Choy, Cabbage, Won Bok, Shiitake, Bamboo Shoot, Onion, Broccoli, Capsicum, etc
- Make ready 1-2 teaspoons Sesame Oil OR Oil of your choice
- Take <Sauce>
- Prepare 2 cups Chicken Stock *OR 2 cups Water & 1-2 teaspoons Asian Chicken Bouillon Powder
- Get 1 tablespoon Soy Sauce
- Prepare 1 tablespoon Sake (Rice Wine) OR Shoasing Wine
- Make ready 1 tablespoon Oyster Sauce
- Make ready 2 tablespoons Potato Starch Flour OR Corn Starch Flour *mixed with 3 to 4 tablespoons Water

You'll love how the sauce soaks the noodles so some of it is soft, while some of it stays crispy. Pour the sauce into the wok and toss until the vegetables are coated. - Cut all ingredients into the pieces and slices that are easy to eat. Heat Sesame Oil in a wok or large frying pan over medium high heat, cook Pork or Chicken, and/or Seafood and vegetables. When cooked, add sauce and bring to the boil. Stir the Potato Starch mixture, gradually add, stirring constantly, until the sauce is thick. You do not necessarily use all the potato starch mixture.
- Cover the crispy noodles with the stir-fried mixture and sauce and enjoy.
Pour the sauce into the wok and toss until the vegetables are coated. Heat oil in a deep frying pan over medium flame. Deep fry boiled noodles in batches until light brown and crispy. Drain excess oil and transfer them on to oil absorbent paper spread on a plate. Put the rice noodles in a bowl and cover with boiling water.
