In a saucepan, combine the chicken stock, water, mushrooms, bamboo shoots, root ginger, garlic, soy sauce and crushed chillies. Bring to the boil, then reduce the heat to low, cover and simmer while you assemble the rest of the ingredients. Place the chicken strips into a bowl and toss with the sesame oil to coat. Add chicken stock, soy sauce, rice wine, cinnamon, star anise, Sichuan pepper, and black pepper.

  6. Dissolve cornflour with cold water and add to the soup & stir continuously check the consistency of the soup. In the end add beaten egg & again stir continuously.
  7. Chicken szechuan soup is ready to serve.
