  5. Release the pressure manually. Remove the lid and stir in the Bok Choy greens until wilted. Add the lime juice and more salt to taste.
  6. Divide the noodles among individual bowls and ladle the soup on top, garnishing with the cilantro and lime wedges

If it starts to stick on the bottom of the pot, add a few splashes of vegetable stock. Add the vegetable broth (or bouillon and water), coconut milk, broccoli, green beans, and carrots. Add the cooking oil to a large soup pot along with the minced garlic, grated ginger, and Thai red curry paste. Add the diced sweet potato and chopped bok choy stalks to the pot (save the leafy green ends for later) along with the chicken or vegetable broth. Heat a spray of oil and fry the shallot for a minute, then add the curry paste and fry until fragrant.
