I decided instead to make a quick and easy chicken rice casserole that only required one dish. In the bottom of a casserole dish, I mixed together rice, chicken stock, sour cream, peppers, onions, and pico de gallo.

  1. Preheat the oven to 375°F
  2. Cut chicken breasts in half and thaw the corn
  3. Stir soup, stock, salsa, rice, onion powder, and corn in greased 9 x 13 baking dish
  4. Top with chicken breast and season as desired
  5. Bake at 375 for 40 to 45 minutes or until chicken is done
  6. Remove and top with cheese and bake until brown

I decided instead to make a quick and easy chicken rice casserole that only required one dish. In the bottom of a casserole dish, I mixed together rice, chicken stock, sour cream, peppers, onions, and pico de gallo. I topped that off with some. Rub the dry taco seasoning mix into the chicken; lay chicken on top of soup mixture. Season with salt and pepper, if desired.
