The ingredients needed to make Ginger chicken:
  1. Get 6 chicken drumsticks, bone-in and skin-on
  2. Make ready 3 thumb-sized pieces ginger, peeled, thinly sliced and crushed
  3. Prepare 8 cloves garlic, crushed and thickly sliced
  4. Take 2 cups chicken stock
  5. Prepare 2 tbsp oyster sauce
  6. Make ready 1 tbsp hoisin sauce
  7. Make ready 1 tbsp rice wine vinegar
  8. Take 1 tbsp honey
  9. Get 1 tbsp soy sauce
  10. Prepare 1 carrot, peeled and thinly sliced
  11. Take 1 celery stick, sliced about 1/4 in thick
  12. Prepare 4 stalks green onion, chopped

Add the ground turmeric, red Kashmiri chilli paste, tomato purée and salt, to taste. Remove the chicken and set aside. Allow to come up to a boil then add the chicken. Allow to simmer, stirring regularly until the sauce has reduced and chicken is cooked through.

Steps to make Ginger chicken:
  1. Season the chicken liberally with salt and pepper. Add a splash of veg oil to a medium pan on high heat and sear the chicken until evenly browned, about 5 minutes.
  2. Add the ginger and onions to the pan and toss with the chicken. Fry 2 to 3 minutes until fragrant. Add the garlic and fry 1 minute more.
  3. Add to the pan the chicken stock, oyster sauce, hoisin sauce, vinegar, honey and soy sauce. Turn the heat down to low and cover. Simmer 15 minutes, turning the chicken over every few minutes.
  4. Add the carrots, celery and half the green onions and continue simmering uncovered for 5 minutes, or until the sauce darkens and reduces to a syrupy consistency. If you take it to far, just stir in a tablespoon of water. Serve with a sprinkle of the remaining green onions.

Allow to come up to a boil then add the chicken. Allow to simmer, stirring regularly until the sauce has reduced and chicken is cooked through. Heat the sunflower oil in a wok, add the ginger and garlic and cook until light brown. Pour a kettle of boiling water over the noodles in a sieve to soften and separate them. Leave to drain in the sieve.
